Kandarappam – Healthy Sweet Recipe – Naivedyam Recipe – Pooja Recipes By Veena Theagarajan

Kandarappam is a very simple traditional sweet. Even though it can be done anytime my niece does it for Karthigai deepam. However, I heard it is done for Diwali too. It is a traditional chettinadu sweet recipe. It is done with par boiled rice. It is a very simple yet tasty one. I prefer to deep fry it instead of using paniyaram pan. Since this is made with Jaggery I love it & it tastes good the next day too. However, since we add coconut pls. finish within a day or two.
Ingredients:


raw rice – 1 cup
urad dal – 1/4 cup
fenugreek seeds – 1/4 teaspoon
grated coconut – 1/4 tablespoon
salt pinch
jaggery – 1/2 cup
Cardamom powder – 1/2 teaspoon



method:


Wash and soak rice, dal & fenugreek seeds together for 4-5 hrs. 

Grind it with a generous pinch of salt & coconut gratings. 

Add Jaggery and cardamom powder. Grind again. The batter should be like dosa batter

Heat oil for deep frying. Pour ladle full of batter. Let it cook

Once all sides are browned remove it from oil by draining extra oil. Place it in kitchen tissue to drain extra oil
