Karnataka Lemon Rice recipe – Nimbehannu chitranna – Simple Rice recipe

Lemon rice is one of most favourite rice for kids. As I have mentioned before they like variety rice over sambar rice. This is slightly modified version from Tamil nadu version of lemon rice. I love this variation as you get add more flavours. This is perfect for picnic or quick fix or lunch box. However I learned this after I started blogging. 
Ingredients:


Cooked rice – 2.5 cups (I have used brown rice)
Lemon juice – 1.5 to 2 tablespoon (adjust based on sourness of lemon. Add 1.5 first and add more if required)
Onion – 1 (finely chopped)
Garlic – 4 pods (finely chopped)
Coconut – 1 tablespoon
Gingerly oil – 2 teaspoon
Peanuts – 1 teaspoon
Cashewnuts – 1 teaspoon
Green chillies – 3 to 4 (adjust to your spice level)
Turmeric powder – 1/4 teaspoon
Urad dhal – 1 teaspoon
chana dal / bengal gram dal / pachai kadalai paruppu – 1 teaspoon
Curry leaves – 10
Coriander leaves – 1 teaspoon
Oil – 4 teaspoon



Method


Heat the pan and add 2 teaspoon of oil. When it is hot add mustard seeds let it pop. Add urad dhal, chana dal, Peanut, cashewnuts Fry till nuts brown in color. Pour this on rice. Keep it aside

Add 2 teaspoon of oil. Add garlic and fry till slight brown color. Add onion, curry leaves, green chillies. Fry till onion is transparent. 

Add coconut fry for 30 sec. Add Salt, Turmeric powder and mix well. Switch it off. 

Switch it off. Add Lemon juice, Cooked rice. Mix well. Close the rice and set aside for 30 mins to blend all the flavour. Serve hot



Serve with favourite chutney
