I wanted to try something different other than sambar to go with Pongal. I was asking my mum. She was suggesting Gostu. I almost forgot about it. I remeber tasting onion gostu but since my first son is not a big fan of onion I have decided to try with brinjal
Ingredients
Brinjal – 2 cups (slice into 1/4 inch cubes and leave it water till you need it)
Tomatoes – 2 (Finely chopped)
Cooked Split moong dhal – 1/2 cup
Small onion – 15 (finely chopped)
Sambar powder – 1/2 teaspoon
Curry leaves – 10
Coriander leaves – 1 tablespoon (finely chopped)
Green chillies – 1 (slit into 2)
Onion – 3 teaspoon
Tamarind Juice – 1/4 cup (thick extract) Adjust to your taste
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Asafetida- 1/4 teaspoon
Salt to taste
Dry roast and powder
Red chillies – 2
Bengal gram dhal – 1 tablespoon
coconut gratings – 2 tablespoons
Heat the pan and add oil. when it is hot add mustard seeds. Let it pop add urad dhal, asafetida and curry leaves. fry till dhal is brown in color. Add onion and fry till onion is transparent. Add tomatoes and fry till mushy. Add Tamarind water, cooked dhal and eggplant. Let it boil for min
Add grinded masala powder, sambar powder, salt and turmeric powder. Transfer to pressure pan and cook till 4-5 whistles. Add coriander leaves and mix well
This goes well with Idli, Dosa, Pongal and even roti
