Kefir Water

water kefir: the basics

Equipment

  • Strainer
  • Wooden or Plastic Spoon
  • 3 Liter glass bottles
  • 1 liter glass bottles to store the strained water

Ingredients

  • 1/2 Cup of Water Kefir Grains

  • 1/4 Cup brown / raw sugar (you can adjust the level according to your taste)
  • 2.5 Cups water – 3 cups of water (you can adjust the water. less if you want the water to be thick or more if you want watery)

Method

  • Dissolve sugar into water.   Do not use honey in place of sugar.   Honey has antimicrobial properties and will damage your water kefir grains or delay their proliferation.
  • Add water kefir grains to the mixture of sugar water in a 3 litter glass bottle. Close the bottle tight
  • Allow your water kefir to brew  at room temperature for 24 – 72 hours depending on the strength you prefer and the temperature of your home.   The warmer your home is, the faster water kefir will brew.

  • After 24-72 hours strain the water kefir grains from the water kefir and bottle the liquid into smaller containers. Grain would have grown

  • Allow the smaller bottles to sit out for another 24 – 48 hours to continue fermentation and produce natural carbonation.
  • Serve cold over ice and enjoy
  • Recycle the Grain after washing it. If you don’t wash it will develop acidity. make sure you wash the bottle also and rinse with hot water and cool the glass bottle to prevent bacteria
  • If you see any Kefir grains turning brown discard it
  • If you have any bad smell start with new Kefir grains
