When I had this dal from my colleague from Pune I kind of like the taste. When I asked him he gave the recipe which sounded like panchmel / Panchratna dal. But it tasted diff so I decided to check with his wife. I got a detailed recipe from her. it is the dry coconut really adds good flavor to the curry/dal. I asked her the meaning of Khandeshi she said it is a regional cuisine. This is perfect for this lock downtime where you want to reduce your visit to supermarkets / fresh vegetable markets and you want to cook something healthy with existing ingredients
Ingredients
For Pakka Masala
Onion – 1 (sliced)
Dry coconut – 1/4 cup
Red chili – 3 (adjust to your spice level)
Coriander powder – 2 teaspoons
Cloves – 3
Cinnamon – 1 inch
Garlic – 4 pods
Cumin powder – 1 teaspoon
Cardamom – 2
For Dal
Toor dal – 2 tablespoons
Masoor dal – 2 tablespoons
Green moong dal – 2 tablespoons
urad dal – 2 tablespoons
channa dal – 2 tablespoons
turmeric powder – 1/2 teaspoon
Green chili – 1 (slit)
Salt to taste
Lemon juice – 1 teaspoon
Mustard seeds – 1 teaspoon
Bay leaf – 1
coriander leaves – 1 tablespoon
Oil – 1 tablespoon
Method:
Take all the dals, Wash and soak for 1 hr.
Pressure cook dals with turmeric powder till 4-6 whistles. Keep it aside
Take 2 teaspoons of oil Add Garlic, Onion. Add salt fry till soft Add Dry coconut, Coriander powder, red chili, cardamom cloves, cinnamon & cumin powder. Fry for 3-4 mins in low flame or till nice aroma released.
Let it cool down. Grind it together to a paste or powder (I prefer it to be a paste)
Let’s prepare the seasoning. Heat rest of the oil. Add mustard seeds let it pop. Add green chilies, bay leaves.
When the pressure cooker is completely cool down open it. Adjust water, add the grounded paste, salt, and tempering. let it boil it
Switch it off. Add Lemon juice, coriander leaves
