Khandvi is something new for me. I had tasted it recently at one of a buffet meal in India. I am always a big fan of Gujarati food. I love this mildly spiced snack dish, too. After a couple of failed attempts, I finally made it correctly. I normally make it as a starter snack for dinner or as an evening snack. This can be good morning breakfast.
Ingredients
Bengal gram dal flour / Besan flour – 1 cup
Yogurt – 3/4 cup
Water -2.5 cup
Salt to taste
Chilli – 1 chopped
chilli powder as needed
Ginger – 1 inch (chopped)
Hing – 1/2 teaspoon
For Tempering
Oil – 2 teaspoon
Mustard seeds – 1 teaspoon
urad dal – 2 tablespoon
Curry leaves few
Cumin seeds – 1/2 teaspoon
Red chillies – 2
Coriander leaves – 1 tablespoon
Grated coconut – 1/4 cup
Method:
Grind Ginger, green chillies with Hing. Mix it with water.
Take Flour, yogurt, water, salt and turmeric powder and grinded paste in a bowl
Mix well. add red chilli powder and mix well. Transfer it to a container
Pressure cook it for 5 whistles (Alternatively you can cook on stove by continuously stirring till you get thick batter). Open the lid when it safe to open
Once cool down open the lid and mix well till there is no lumps. Take some and spread it think on a greased tray
Let it cool down for 10 mins. Remove edges.Roll it from one end .. Repeat the process till all khandvis are done
Heat oil. Add mustard seeds let it crackle add cumin seeds, urad dal. Fry till brown color. Add curry leaves & Red chillies. Add coconut and switch it off. Add coriander leaves and mix well. Add this to rolls Khandvi
