Pongal is one of most look forward function during my school days. We normally celebrate it at my grandma place. It is a 4 days event and the function will begin with boghi and ends with jallikattu. Really missing those days! I had some sugarless khoya / Mawa in the fridge.. I remember sweet pongal with Palkova recipe from my friend. Since pongal is around the corner I wanted to try it out sweet pongal with Palkova. It is a quite rich and tasty pongal recipe. I have used normal rice but you can use millets as well.
Ingredients:
Raw rice – 1/2 cup
Bengal gram dhal / channa dal – 1.5 tablespoon
Sugarless palkova – 3 tablespoon
Jaggery – 1/2 cup (Adjust to your sweet level)
Cashew nuts & raisin – 1 tablespoon
Cardamom powder – 1/4 teaspoon
Ghee – 3 teaspoon
Method:
Heat pressure cooker with 2 teaspoon of Ghee. Add cashew and raisin and fry till brown color. Remove it and keep it aside
In same pressure cooker add rice and dal and fry for a min. Add water
Cook till 4-6 whistles. Switch it off. Let it cool down
When it is ok to open the lid open it. Mash it well. Add Palkova. Mix it
Add jaggery. Mix well. Let it cook for few mins. Add fried cashew, raisin, ghee and cardamom powder.
Mix well. Switch it off
Pongal is ready!
