My son was asking for kothu Parotta for quite a long time. Since he likes plain Parotta I ended up serving him plain version most of the time. Couple of weeks ago I had some left over Parotta dough and mixed veg korma too. So I had decided to surprise my son with Kothu Parotta. He enjoyed every bit of it. He was asking for more of such surprises! You can use frozen parotta for this also.
Ingredients:
Oil – 1 Tablespoon
Shahi Jeera – 1 teaspoon
Green Chilies – to taste, finely chopped
Ginger – 1 tsp, minced
Onions – 1/2 medium, finely chopped
Tomatoes – 1, medium, finely chopped
Coriander powder – 1/2 teaspoon
Garam Masala – 1/4 teaspoon
Red Chili Powder – to taste
Veg Korma / Salna – 1.5 to 2 cups
Salt – to taste
Cilantro / Coriander leaves – 2 teaspoon
Roughly tear cooked parotta
Heat Oil a pan. Add shahi jeera and fry till crackle. Add curry leaves and fry for 10 sec. Add onion and fry till transparent
Add green chillies and tomatoes and fry till mushy. Add coriander powder, red chilli powder, gram masala and mix well. Fry till raw smell goes off
Add chopped Parotta. Add Korma and mix well
Add coriander leave and serve hot
