- Ladies Finger – 250g
- Thuvar dhal – Half cup
- Garlic – 5 pods (sliced lengthwise)
- Sambar powder – 1 tablespoon
- Turmeric powder – ¼ teaspoon
- Sambar (Small) onion – 10 cut length wise
- Tamarind – Gooseberry size (small ball)
- Salt as per taste
- 1 teaspoon oil
For seasoning:
- 2 teaspoon oil
- Half teaspoon mustard
- 1/4 teaspoon fenugreek seeds
- cumin seeds – 1/2 teaspoon
- A pinch of asafetida
- Dry Chillies – 2
- 1 string Curry leaves
Method:
- Wash and wipe ladies finger with dry towel or tissue. This will help to remove the stickiness from the Ladies finger
- Cut Ladies into 1 inch pieces
- Heat 3/4 cup of water when it is hot switch off and add tamarind to it and leave it aside for 15 mins
- After 15 mins with your hand mash the tamarind well. Strain the tamarind water and keep it aside
- Wash thuvar dhal and add 1 cup of water and cook it (3/4 cooked). Add Jackfruit seed if you are using it. If you are using pressure cooker cook till 2 whistle
- In a Kadai add 1 teaspon oil when it is hot add onion and garlic and fry for sometime
- When sound completely off from pressure cooker open the lid. Add turmeric powder, fried Onion, Garlic and pressure cook till soft. (completely cooked. One more Whistle)
- In a kadai put the oil and when it is hot, add mustard. When it pops up, add fenugreek seeds, cumin seeds,dry chillies,curry leaves and asafetida and fry for just a second
- Add Ladies Finger and fry for 3-4 mins
- Add tamarind and water
- When it start boiling add sambar powder and add to it. (you can add sambar powder before adding water and fry for 2-3 mins this will give different flavour)
- When Ladies finger is cooked, add cooked dhal and salt. If it is too thick add water according to desired consistency
- let it boil for 10 mins
- Switch off and now it is ready to be served
