Madatha Kaja recipe – Kaja Recipe – Simple Sweet Recipes – Diwali Recipes

This sweet was in my list for quite sometime. After Badusha this is one of my favourite during college days. But my mum never does it at home. We always buy from shops. So I used to think it is difficult to do. But once I started blogging I found this in many blogs. And some videos too. I realized it is so easy. It is simple enough for even beginners and bachelors. It is simpler than Badusha for sure. It is also called Kakinada Kaja or Tapeswaram Kaja.  Do try this and give me your feedback
Ingredients:



All purpose flour – 1 cup
Sugar – 1 cup
Salt to taste
Baking soda – generous pinch
Cardamom – 1/4 teaspoon
Melted ghee – 1.5 tablespoon
Oil to deep fry


For Paste
Rice flour – 1 teaspoon
All purpose flour – 1 teaspoon
Ghee – 2 teaspoon



Method:


In broad vessel take all purpose flour, salt, baking soda and melted bring it together it will look like bread crumbs. Add water little by little. Knead to smooth dough

Heat sugar with water and cardamom powder. Boil till it reaches half string consistency. Keep it in very low flame till you need it. Mix rice and all purpose flour. Keep it aside

Leave it aside for 30 mins. Roll it into thin chapathi (As thin as possible)

Spread ghee and sprinkle rice, all purpose flour. Roll from the end and form a log. Roll it few times. 

Cut it into 1 inch pieces. Using roller press it gently

Heat oil for deep frying. When oil is medium hot drop the rolled Kajas. It should raise slowly so that it can get cook evenly. If it raises immediately means oil is too hot. if you drop in too hot oil Kajas may get cook evenly. Cook it for 4-5 mins in medium low flame

Remove it and place it in kitchen tissue. Once done drop it in warm sugar syrup.

Leave aside for 30 mins. Remove it from syrup
