Maida Burfi – Easy Maida Sweet Cake – Diwali Recipes – Festival recipe

Maida Burfi is one of the most easy sweet you can make for this Diwali / festive season. I must admit my family is not a big fan of sweets. So every time when I make sweet I really make in small quantity. However they are very big fan of food made up all purpose flour. So When I tried this I was thinking they might like this.. As I thought they kind of like it. This sweet can be made with Ingredients which is very easily available at home. If you want to make in larger qty you can use 1: 2: 1 (1 part Flour, 2 part sugar, 1 part ghee)
Ingredients:

All purpose flour / Maida – 1/4 cup
Sugar – 1/2 cup
Rose essence – few drop (optional)
Food Color – A drop (optional)
Cashew / Almond (Badam) – 1.5 teaspoon (finely chopped)
Ghee – 2 tablespoon + 1 teaspoon for greasing
Water – 1/4 cup

Method:

Grease a plate with 1 teaspoon of ghee for pouring the Burfi. Keep it aside. Now heat rest of ghee till it is really hot. Add nuts and fry till brown in color. Remove it and keep it aside
Add Maida and fry till it forms sandy texture. Switch it off and set aside

Take sugar and water in a pan and cook till 1 string consistency is achieved. When you drop sugar syrup in a water it will form a string without dissolving.

Now add Fried flour and switch it off (yes you need to switch it off here) and continue to stir if any lumps form break it while stirring. Continue to stir till it start to leave side and thick. The mixture will be still flowing as u can see in the pic.

Pour this into the greased plate. Level it with the greased butter paper. Sprinkle fried nuts
Let it cool down.  Slice it into small squares when it is still warm

Store it air tight container and enjoy
