Best part of summer is Mango… I love all varieties from India… I love both raw and ripe ones. Mango chutney is one of my favourite mango recipes. This can go well with any stuffed paratha or bread. I can have it with literally anything.
Ingredients:
Raw mango – 1 (medium size. Grated)
Onion – 1 (small one. Finely chopped)
Ginger – 1 teaspoon (finely grated)
Garlic – 1 pod (grate it)
Sugar – 3 tablespoon
Red chilli powder – 1/2 teaspoon (adjust to your spice level)
Oil – 3 teaspoon
Salt to taste (I have used 1/4 teaspoon)
Asafoetida / Hing – 2 pinches
Method:
Heat the oil in a pan and add onion, garlic and ginger till onion is soft. Add Grated Mango. Fry till it is cooked and all moisture absorbed.
Add sugar, red chilli powder and salt. Mix well. And cook till it becomes thick
Switch it off and store it in air tight container and store it in fridge
