Yet another Mango recipe to try before season ends. Again I have used alphonso for this recipe. You can adjust the sugar level based on the sweetness of mango. Kesari is my husband’s favourite Indian sweet. When I tried this recipe I was not sure whether he would like it or not. I am not a big fan of sweets. But I love any type of mango. This kesari looks so lovely right? Perfect natural yellow color from mango made this even more attractive
Ingredients
Rava / Semolina / Sooji – 1/2 cup
Sugar – 1/2 cup + 1 tablespoon
Mango Plup – 1/2 cup
Water – 1.25 cup
Ghee – 1 tablespoon
Salt – a pinch
Cashew – 1 tablespoon (split into 2)
Method:
Add 3 teaspoon of ghee and fry the Cashew nuts till brown color. Remove the nuts only and keep it aside
Add Rava and fry till nice aroma released. Remove it and keep it aside
Add water let it boil. Add mango pulp. Mix well. Let it boil.
Add Fried rava. Mix well. Close the lid and cook in medium low flame
Add sugar and mix well. Kesari will become little watery don’t panic
Continue to cook till kesari leaves sides of pan. Add remaining ghee and fried cashew and mix well.
Switch it of. Serve hot or cold
