I have posted Amras ki malai aloo, a recipe that everyone in the family loved. I wanted to try another side dish this year. I was thinking about a paneer-based recipe as I had store bought-paneer in the fridge which I need to finish soon. So, I tried this paneer mango or mango paneer ( whatever you want to call it ). I have used lemon juice for sourness but if you want, you can add tomatoes. Also, I have ground onion, ginger, and garlic but you can skip the grinding part. I loved it with my naan and Jeera rice, so do try out and let me know your favorite variations.
Ingredients
Paneer – 1/2 cup
Cinnamon – 1 inch
Shahi jeera – 1 teaspoon
Salt to taste
Ghee – 1 teaspoon
Coriander leaves – 1 teaspoon (finely chopped)
For Gravy 1:
Onion – 2 (Medium size)
Garlic – 3 pods (chopped finely)
Ginger – 1 inch (chopped finely)
Coriander powder – 2 teaspoons
Cumin powder – 1 teaspoon
Red chili powder – 1 to 2 teaspoon (Adjust to spice level and sweetness of Mango)
Salt to taste
Ghee – 3 teaspoon
Gravy 2:
Cashewnut – 6-7 (Soaked)
Gravy 3:
Mango – 1/2 cup
Method:
Let’s make Gravy 1. Heat the pan with ghee and add onion, garlic, ginger, and a bit of salt. Fry until transparent.
Add coriander powder, cumin powder, and red chili powder. Fry until the raw smell goes away. Let it cool down.
Grind to smooth paste with required water.
Add mango puree and grind soaked cashew.
Heat pan with Ghee (If you are using store bought paneer then leave that in hot water for 30 mins). Add cumin seeds and cinnamon. Add onion gravy let it boil.
Add cashew puree with 1/2 cup of water. Let it boil till raw smell goes off. Add Mango puree mix well. Let it boil.
Add Paneer mix well
Add Lemon Juice and coriander leaves. switch it off
