I love to try one pot meals esp for weekends. My kids love it. Dal / Lentil / Whole dal based rice are big hits with our family. For me it is also an easy way to provide a balanced meal. Here are few you can refer to Chana dal Pulav, Chickpeas cabbage fried rice, sprouted chickpeas rice, Chickpea radish rice, Channa rice/chickpea rice. This time I wanted to try something real quick yet very healthy. The only thing about making these dal pulav / rice is that you need to remember to soak the dals. Sometimes I do forget and need to look for alternatives. May be I should try doing like what my sis does. Plan for the week and soak the dals together, cook it and freeze it. This might be very handy during busy weekdays (you can use it in rice, side for roti or even as sundal). I have followed recipe from here with slight modification
Ingredients:
Bastmati rice – 1 cup
Onion – 1 (sliced thinly)
Tomatoes – 1 (chopped finely)
Green chillies – 1
Salt to taste
Turmeric powder – 1/4 cup
Kitchen King or Fish curry powder – 1 teaspoon (you can replace it with your fav masala powder)
Milk – 1/2 cup
Water – 1.5 cups
Cinnamon – 1 inch
Cardamom – 1
Bay leaves – 2
Cloves – 2
Shahi jeera – 2 teaspoon
Mixed vegetables – 1/2 cup to 3/4 cup
Masoor dal – 1/2 cup
Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Oil – 4 teaspoon (I have used Coconut oil)
Ghee – 1 teaspoon (optional)
Method
Soak Masoor dal overnight or for 5 hrs. Drain it and keep it aside for 1 hr
Wash and soak rice for 10 mins. Drain it and keep it aside
Heat oil. Add Cinnamon, Cloves, Cardamom, Shahi jeera, Green chillies an
d bay leaves. Let it crackle. Add onion, Salt and fry till transparent.
Add Ginger garlic paste. Fry till raw smell goes off. Add all the vegetables fry for 3 mins.
Add Masala powder (kitchen king / curry powder), Turmeric powder. Mix well. Fry for 2 mins. Add rice and and mix gently. Add Milk,
Water and required salt and Tomatoes. Close it with lid and cook in low flame till water is absorbed.

Serve hot with yogurt
