Eggless Baking Melt-In-Mouth German Snack Cookies Recipes by Veena Theagarajan.

My kids love the soft buttery cookies. I got some baked cookies from my friend and my kids loved it to the core. Initially I thought it is normal shortbread cookies . But when I tasted I find it extremely soft. So I asked my friend she told me she has used potato starch. I had some left after eggless cheese cake. So have decided to give it shot. It came out too good. I refer to the recipe here.

All Purpose flour – 80g + 1 teaspoon

Potato Starch – 130g
Butter – 125g
Icing Sugar – 40g
Vanilla Extract – 1 teaspoon



Method:



Sift the flour and potato starch together for some time. Cream the butter, vanilla extract and icing sugar till creamy.

Add sifted flour and form soft dough. It will be bit wet, but it is okay. 

Leave the dough in the fridge for 1 hr.

Take it out and shape it in your preferred shape. Arrange it in a baking tray

Preheat the oven at 180 degrees. Bake the cookies for 12 mins at 180 degree.Let it cool down. 

Store it in an air tight container and enjoy.
