I love stuffed parathas. Esp right after my marriage I struggled to make soft chappathi /chapathi. Making stuffed chapathi is one way to cover the flaws and it will not turn so hard esp if you make the dough with your stuffings. So I used to do stuffed chapathi more often. I am surprised I didn’t post methi chapathi / paratha for this long.
Ingredients
Fresh fenugreek leaves – 1 and 1/2 cup
Onion – 1/2 (medium. Chopped finely)
Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Coriander powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Red Chilli powder – 1 teaspoon
dry Mango Powder – 1/4 teaspoon
Cumin seeds powder – 1/2 teaspoon
Cumin Seeds – 1 teaspoon
Salt per taste
Oil – 1 teaspoon
Oil for frying chappathi / paratha
Heat the kada and Add Oil when hot add cumin seeds. Let it crackle. Add Garlic and Ginger paste. Fry till nice aroma released
Add Fresh fenugreek leaves and fry for 2 mins.
Add all masala powders, Salt and fry for another 3-5 mins. Switch it off and let it cool down
Take Atta in broader vessel add fried fenugreek leaves and water. Add water in smaller qty. Make it smooth dough. If the dough is sticky add more atta. keep the dough aside for 15-20 minutes covered with a kitchen towel.
now make medium sized balls from the dough.Roll each ball thinly into flat discs.
heat a flat pan or tawa. When it is hot put the rolled paratha. Sprinkle oil around it. cook till the brown spot appears. Turn the Paratha and cook other side also. Repeat the process till all the balls are cooked
Serve hot with Raita or your favourite vegetables
