I love Radish. In Addition to the nutritional value of it the smell is divine.. I love the radish stuff paratha with even plain Yogurt or any chutney. It is quite filling. I can have this anytime. I make this very often. I use White Radish
Radish (Mullangi) Stuffing:
Ingredients:
Radish – 1/4
Onion – 1 Finely chopped
Finely Cut Coriander Leaves – 2 tablespoons
Salt as required
Gram Masala Powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Cumin Seeds – 1/2 teaspoon
Red Chilli powder – 1/2 teaspoon
Method:
Wash Radish and grate it
Heat 1 teaspoon oil in a frying pan and tamper with cumin seeds
Add chopped onion and fry till onion is soft. Add Grated Radish and fry in a high flame stirring constantly till raw smell goes
Mix in Gram masala powder, Coriander powder, red chilli powder and salt
Fry for 2 – 3 more mins
Remove from fire add coriander leaves and mix it well
Chapatti:
Ingredients:
Wheat Flour – 1 Cup
Sat as required
Stuffing:
Radish (Mullangi) Stuffing – from above recipe
Method:
Mix Salt with wheat flour in a mixing bowl
Add water gradually and knead to smooth dough
Pat and knead well several times
Make a large lemon sized ball of dough and use the hand make it into small cup shape.
Place some stuffing and take the edges of the dough and cover the stuffing.
Prepare with rest of dough.
Dust the working surface with some atta and roll out the stuffed dough to form 6?-7? diameter circles.
Heat a tawa and once its hot, place a paratha and let it cook for 15 secs.
Flip the paratha and let it cook for a few more secs. Once light brown spots appear, drizzle some oil and roast to a golden shade on both sides.
Use a spatula to press the puffed areas as the paratha gets roasted.
