Mushroom and spinach rice

This rice is simple yet very flavourful rice. It is also very healthy and easy rice. It can be matched easily with lot of sidedish. Perfect for lazy weekends or busy weekday lunch box. If you are big fan of mushroom flavours you would love it
Ingredients:


Spinach – 200g (chopped finely)
Mushroom – 200g (sliced thinly)
Onion – 1 sliced thinly
Garlic -3 pods (chopped finely)
Pepper powder – 1 teaspoon (Adjust to your spice level)
Bastmati rice (cooked) – 2 cup
Green chillies – 2 (slit into 2)
Salt to taste
Oil – 2 teaspoon



Method:


Wash rice and soak for 10 mins. drain the water and leave it aside. 
Heat the kada and add oil. When it is hot add garlic and fry till garlic is brown in color. Add onion and green chillies and fry till it is transparent.

Add spinach and mushroom and fry for another 3-5 mins. Add Spinach and salt. Fry till spinach is cooked. If you find extra water (mushroom normally gives out more water) you can take it out and add it to soup (My son can drink it alone). Cook till no moistur in the mixture. Add Pepper powder and mix it well. Add cooked rice and mix it well. Fry it on high flame for 3-5 mins. Switch off the flame

 Serve hot
