When I saw this in Venkatesh Bhat show in Viijay TV I have bookmarked it. I was attracted to it by the name. It is really interesting recipe. I have replaced the corn kernels with baby corn. After long time I made the gravy without grinding the onion. Really loved this variation. I made some modification to our taste and availability of the ingredients
Ingredients:
Button mushroom – 200g
Baby corn – 100 gram (you can replace this with normal corn or frozen corn)
Onion – 2
Tomatoes – 2
Ginger – 1 inch (finely chopped)
Garlic – 1 tablespoon (finely chopped)
Chilli powder – 1 teaspoon
Coriander powder – 2 teaspoon
turmeric powder – 1/4 powder
Milk – 2 tablespoon
Cashewnuts – 2 tablespoon
Coriander leaves – 2 tablespoon (finely chopped)
Oil – 1.5 tablespoon
Cinnamon – 1 inch
Clove – 3
Bay leaf – 1
Cardamom – 3
Salt to taste
Method:
Soak the cashew for 30 mins and grind to smooth paste with milk.Heat pan with oil. Add cinnamon, Clove, Cardamom. Fry till nice aroma released.
Add Garlic, Ginger, Fry till brown color.Add onion and fry till it is bit dark in colors (till it caramelized) . Add Tomatoes, salt and fry till it is mushy.
Add Chilli powder, turmeric powder, coriander powder. Fry for 1 min. Add required water let it boil till raw smell released.
Add 1 cup water, cashew paste and milk. boil it till raw smell of cashew goes off. Add Sliced mushroom and baby corn. Cook it well
Add coriander leaves and mix well
Serve hot
