Mushroom Fried rice – Simple lunch recipes – Simple lunch box recipes – Simple one pot meal

Mushroom! One of a must buy vegetable whenever I do my weekly shopping. Again In SG we  get it almost entire year. Even though I always buy white button mushroom I do buy other mushroom once in a while. There are vegetable which I buy after planning the dish. But mushroom is something I plan after the fact. It is so easy to cook and match with lot of dishes. This weekend I did simple mushroom fried rice. I served with Vegetable Manchurian

Ingredients:


Basmati / Brown rice – 1 cup (I have used brown rice)
Button Mushrooms – 300 grams (My kids love mushroom so I use more of it. 200g is enough)
Garlic – 7 pods (chopped finely)

Onion – 1 (medium size. chopped finely)
Ginger  – 1/2 teaspoon (finely chopped)
Green chillies -2 slit into 2 (mine was not that spicy. Adjust to your chilli spicyness)
Pepper powder  – 1/2 teaspoon (reduce it if your chilli is spicier)
Oil – 1 tablespoon
Spring onion greens – 2 tablespoon (finely chopped)
Soya sauce – 1.5 tablespoon

Sriracha sauce- 1/2 teaspoon (If you don’t have Sriracha sauce replace it with chilli sauce)

Salt to taste
Cilantro / coriander leaves – 1 tablespoon (finely chopped)



Method:

Heat pan and add oil. Add garlic and ginger and fry in high flame till garlic is brown in color. Add onion and fry till slight brown color. Add green chillies and fry for 10 sec. Add soya sauce, Sriracha sauce, salt and pepper and fry in high flame for 3-4 mins. Add mushroom and cook till they are soft and water is fully absorbed. Add cooked rice, salt and fry in high flame till fully mixed. Switch it off and add spring onion and coriander leaves and mix well

Serve hot

    This sounds so delicious! Mushrooms are a must buy for us too. Sometimes I'll come home from the store with 3 containers, only to discover I still have 2 from when I went shopping a few days earlier — and then I have a mushroom feast! Always happy about it. I'll keep this recipe in mind for next time that happens, it sounds so delicious!
