Our family is not a big fan of potato & sweet but when I came across Vrat kachori I kind of like the stuffing so thought it will give a good combo. So wanted to try out for this Navratri. When I first served to my sons and husband they were like I don’t like sweets. I told them this is not a sweet version just give it try without giving a lot of details about the outer covering. When they tried they kind of like it. It is super simple to make you can make this in less than 30 mins. It has all that is required for the Upavas meal. Even Bachelors can try this fasting recipe.
Ingredients
For stuffing
Grated fresh coconut – 1 cup
Green chili – 1 (finely chopped)
Sugar – 1 teaspoon
Salt to taste
Oil – 2 teaspoon
Cashewnuts – 1 tablespoon
Raisin – 1 teaspoon
Roasted peanut – 2 tablespoon
Lemon juice – 1.5 teaspoon
coriander leaves – 1 tablespoon (finely chopped)
Sesame seeds – 1 teaspoon
Cumin seeds – 1 teaspoon
For Outer layer
Cooked and mashed potato – 1.5 cup
Cornflour – as needed to make the dough as well as for dusting
Oil for deep frying
Method
Heat pan with oil. Add cumin seeds, sesame seeds. Let it crackle. Add cashew and raisin fry till slight brown. Keep it aside
In a bowl take coconut gratings, green chilies, coriander leaves, peanuts, sugar, salt, and lemon juice. Mix well. Add Tempering and mix well. Keep it aside
Take the mashed potato and add cornflour and required salt to make a smooth dough
Close it off. Dust it with cornflour. Repeat the process.
Heat oil for deep-frying. Place the ball slowly in hot oil fry the ball at medium-high flame till all the sides browned
once done drain extra oil remove it from oil. Place it in kitchen tissue paper to drain extra oil
Enjoy. you can serve it with sweet yogurt
