Pazhaya sadham recipe

Neeragaram is nothing but fermented rice. During my younger day most of the days, we will have this as my mum has a habit of cooking more rice almost every day. Those days we will have a guest every day. So mostly she will make pacha puli sadam or lemon rice or this neeragaram  I love it! esp, I love to have it with pickle or uppu milagai (fired salted chili). I normally have it More/buttermilk & less rice. This is perfect for summer. It has a natural probiotic. Nowadays this is considered as one of superfood
Ingredients



Rice – 1 cup
Water – 2 cup


For serving
buttermilk – 1/2 cup
Small onion – 5 (chopped roughly)
Green chilies – 2 (chopped finely)
salt to taste
Fried chilies as required
Pickle of your choice



Method


Cook the rice. 

once cooked strain the water. 
Keep it aside

Once rice and water cool down, mix it together. Let it ferment. Next day add Onion, Green chilies & Salt.

Add Buttermilk & Serve
