My kids love cupcakes / muffin. Since I bake quite often I really look for healthier versions.. My kids really loved this one I also felt the oats, honey and coconut combo really blended well. You can serve this as after school snack
Ingredients:
All purpose flour – 1 cup
Baking powder – 1/2 teaspoon
Salt a pinch
Butter – 120g
Powdered sugar -100g
Honey – 4 tablespoon
Oats powder – 1/2 cup (dry roast the oats and powder it)
Desiccated coconut – 1/2 cup
Warm milk – 1/4 cup
Chopped Almond – 2 tablespoon
Method:
Cream butter till light in a dry bowl. Add sugar and cream it till it is fluffy. Add honey, Milk and mix well. Sift together All purpose flour, baking powder and salt. Add Oats, desiccated coconut. Mix well. Add this into wet ingredients in batches.
Add half of Almonds and mix well. Grease the baking cup with butter. Fill each cup with 3/4 with cake batter. Sprinkle chopped almonds on the top. Pre heat the oven at 180 degree C. Bake the cake for 20 mins or when inserted toothpick comes out clean. Let it cool down
