okra / Ladies finger rice – Simple one pot meal

Probably you have realized that I have special liking towards vegetable rice. Other day I saw this lovely okra / Ladies finger but not enough to make any poriyal/ side dish by itself. So I had to look for different dish / rice to mix with it. I had decided to mix it with rice. Even though I had seen it in a book but never tasted it before. I still wanted to try using my way of cooking. It came out so good
Ingredients:


Okra / Ladies finger – 20 cut into 1/2 inch pieces
Onion – 1 (finely chopped)
Garlic – 4 pods
Ginger – 1 inch
Tomatoes – 2
coconut – 2 tablespoon
Cooked brown rice – 2.5 cups
Cumin seeds – 1 teaspoon
Oil – 4 teaspoon
Curry leaves – 10-15
Cilantro / coriander leaves – 2 tablespoon (finely chopped)


Dry roast and powder it


Bengal gram dhal – 3/4 teaspoon
Cumin seeds – 1 teaspoon
Urad dhal – 3/4 teaspoon
Pepper – 1/4 teaspoon
Red chillies – 3-4 (adjust to your spice level)



Method:


Cook the rice and spread it in broad plate. Keep it aside. Dry roast the ingredients in the list and powder it. Add rest of the oil in the pan. Add ginger and garlic and fry till garlic is brown in color. Add onion and fry till it is transparent. Add tomatoes and fry till it is mushy. Add coconut and fry for another 2 mins. Switch it off and let it cool down. Once it is cool down grind it to smooth paste. 

Heat 2 teaspoon of oil in a pan and add cumin seeds and when it crackle add ladies finger (okra) and fry till it is crispy. Keep it aside

Heat the pan and add grinded paste and curry leaves and fry for 3-5 mins. Add masala powder and mix well. Fry for a min. Add okra and fry for another min.Add cooked rice and fry for another 3-5 mins. 

Switch it off and serve hot
