Okra Pachadi / Vendakka Pachadi / Ladies Finger in Yogurt Sauce

I had this pachadi at my friend’s place and that reminds me of similar
one that my mum does. That is using grinded coconut and green chilli paste. I
love this combination with stuffed chappathi or roti. I can have this just by
itself also (One way to include yogurt as part
of my diet) If you are yogurt lover this is definitely good alternative
to normal ladies finger fry

Ingredients
Okra / Ladies Finger – 15-20 ( chopped in fine thin rounds)
1 Onion (you can either chop finely or thin long slice. Since my son is not big fan I chopped finely)

Beaten yogurt – 3/4 Cup to 1 cup (If your yogurt is thick u can add water to it)
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon

Bengal Gram dhal – 1 teaspoon
curry leaves -10
Dry red chilli – 1 (break it into 1 inch pieces)

Oil – 1 tablespoon
Cumin powder – 1/2 teaspoon
Grated coconut – 2 tablespoon
Sambar powder – 1/2 teaspoon (adjust to your taste)
Oil – 2 teaspoon

Method:

Heat the oil in a small pan and when oil is hot add mustard seeds, urad dhal and bengal gram dhal. Fry till dhal is brown in color. Add curry leaves, red chillies and onion. Fry till onion is crispy. Add ladies finger and salt. Fry till ladies finger is crispy (will take about 4-6 mins) When you turn careful (don’t break ladies finger). Add cumin seed powder and sambar powder. Fry for another 3-5 mins.

Add grated coconut and fry for another 30 mins. switch it off. Transfer to serving bowl

Beat the yogurt and add to the ladies finger mix well

Serve with rice as a side dish.
