Ingredients:
Besan flour – 2 cups
Rice flour – 1/2 cup
Ghee – 2 teaspoons
Omam / Carom Seeds – 1 tablespoon
Red Chillies – 10-12 (adjust to your spice level)
Asafotida powder – 2 pinches
Salt – 2 teaspoon or as per taste
Oil – for frying
Method:
Soak omam and red chilles in hot water for about one hour.
Strain the water and keep aside.
Grind the soaked omam and Red Chilli to a paste. Add the strained water to the paste and mix it and again strain it.
Sieve both besan and rice flour. Put it in a broad vessel. Add ghee, asafotida powder and salt and mix by hand. Add Grinded Omam and chilli water.
Divide the flour into 3 portion Add required water to one portion and make a soft pliable dough. (when u ready to use u mix it with water little by little)
Heat oil in a thick bottomed kadai.
Take small quantity of dough and put it in the Murukku Press with an omapodi plate with small holes and squeeze it in circular motion directly to the hot oil.
Fry till it becomes crispy and nice golden yellow. But ensure not to brown. Take out from oil and store it in a airtight container.
