Eggless Oreo Cheesecake

My kids were asking for cheese cake for quite some time. For some reason I was hesitant to try out. Finally I got over it and decided to try out. Initially I wanted to try simple cheese cake but kids were asking for Oreo cheese cake or chocolate cheese cake. I have decided to try out Oreo cheese cake. Then started to search for recipe on the net. Most of recipes are no bake or with egg. I saw the eggless blueberry cake at http://www.korasoi.com/blog/2010/04/eggless-blueberry-and-white-chocolate-baked-cheesecake. I have adopted from there but modified to our taste. Kids loved it. Only thing is I didn’t beat the cheese till it smooth. Other than that it was really good. More cheese cakes to come
Ingredients:

For the base:
1/4 cup butter, melted

20 Oreo Biscuits, crushed

For the filling:
250g ricotta cheese
250g cream cheese, at room temperature
3/4 cups granulated sugar
1/3 cup lemon juice
3/4 cups Icing sugar
3/4 cup double cream
2 teaspoon vanilla extract
1/2 cup white chocolate, melted

10 Oreo (run it blender and make it as powder) – Adjust this to your preference. My son wanted more so I almost added double of it. That’s why the cake is very black

Method:

Cursh oreo biscuit  and Combine the crushed oreo biscuits with the melted butter and mix thoroughly.
 
Firmly press the mixture into a greased baking tin.

Beat together all of the ingredients (except oreo) until it has thickened. Do not over mix. Add in oreo and mix well

Pour mixture on top of the crust 

Pre heat the oven at 180 degree celsius. Bake cake mixture at 180 degrees Celsius for 1 ¼ hours until set (Mine got done in 60 mins). Allow to cool and refrigerate for at least 8 hours.
