Paal Kesari recipe – Milk rava Kesari recipe – Milk semolina sweet recipe

My husband loves Kesari. Normally when I do kesari I do it by mixing water and milk equally. Sometimes I do completely with milk. This is one of simple sweet / dessert dish even bachelors can try their hands on. To have this you don’t really need a occasion.. Just need about 30 mins…Happy Tamil new year! Nice sweet way to start your year!
Ingredients


Rava / Semolina / Sooji – 1/2 cup
Milk – 2 cup
Sugar – 3/4 cup
Orange food color – a pinch
Ghee – 3 tablespoon
Cashew nuts – 1 tablespoon (broken)
Cardamon – a pinch



Method


Head kada with 1 tablespoon of melted ghee. Add cashew nuts and fry till it is brown in color. Drain it and keep it aside. In the same kada add rava and fry till nice aroma comes. Keep it aside. Boil the milk.  When it is boiling add the color

Add rava little by little to boiling milk. Continue to stir make sure there is no lumps. Cook the Rava by closing the lid for min or 2 or till Rava is cooked.  Add sugar and continue to stir till it is thick. Add rest of the ghee, cardamom powder and fried cashews ( I have added some more color as it was not enough). Mix well. Stir it till kesari doesn’t stick to your hand and it comes together…Switch it off

    I love kesari too. Compared to Western desserts/sweets, I melt over Indian sweets and am melting after seeing your version of kesari.
