Paal Kolukattai with Jaggery recipe – Paal Kozhukattai – Kolukattai recipe – Kozhukattai recipe – Modak Recipes – Ganesh Chaturthi recipes

Normally we do Paal Kolukattai with sugar. I wanted to try with jaggery for quite some time. Finally, I managed to do it. I have used Milk / Coconut milk for this recipe also when making dough I have used milk. To make it vegan you can try with almond milk or coconut milk totally ( I have tried with complete coconut milk it tasted great. My friend who is vegan told me homemade almond milk is good too). If you are worried about the time taken to do this and because of that you are avoiding making paal kolukattai you can try this method

 

Ingredients :

 
Rice Flour / Idiyappam flour – 1 Cup
Milk – 3 Cup (I have used skim milk. If you are using normal full cream milk mix it with water)
Water – 2 Cup
Coconut milk – 1 cup
Jaggery- 3/4 Cup (I have used 1/2 cup for me it is good enough I am not a sweet tooth person)
Cardamom Powder – 1/4 teaspoon
Salt a pinch
Oil – Just enough to grease palm while rolling the dough to balls
Nuts / Raisin – 2 tablespoon (fry it in 1 teaspoon of ghee)
Ghee – 1 teaspoon
Method:
 

Boil 1 cup Milk & 1/2 cup Water. In a broader vessel take rice flour/ idiyappam flour, salt. Mix it. Add boiling 1.5 cups of milk & water mix it with flour. Mix it with a spoon. Leave it aside till we can handle it with hand.

Make a smooth dough. Add 1 teaspoon of Ghee and make a smooth dough

 

Take the murukku / Chakli mold and stuff the dough. Press it on the plate and cut them into small pieces

 

Heat rest of the milk. Boil it. Add kolukattais in batches. Once you place it float and add the next batch to complete all. Cook it for 5- 7 mins. Reduce the flame. Add Jaggery (If you worry about impurity in Jaggery make syrup and strain it before adding). Let dissolve completely.
                  
Add coconut milk. Mix it. Let it bubble
Add Cardamom powder, fried nuts & raisin, Mix well. switch it off
