Last week when I was in India I had this cutlet at one of the near by restaurants. I thought it would be full of potatoes. But I was pleasantly surprised by the taste. I went with my niece and initially i had ordered only 1 to try out but ended up more packing home. So I added it to my list to try out. In that it had peas but I have decided to try out with chick peas as my 2nd one is not a big fan of Peas. But you can use peas in place of chickpeas / Channa. It is perfect for school snack boxes, burger patty or tea time snacks or party starters
Ingredients
- Cooked Potato – 1 (big)
- Cooked Chickpeas – 1.5 to 2 cups
- Grated carrot – 1/2 cup
- Palak / Spinach – 1/2 bunch
- Onion – 1/2 cup (I have used white)
- Mint Leaves – 1 teaspoon (finely chopped)
- Coriander leaves – 1 tablespoon (finely chopped)
- Red chilli powder – 1/2 teaspoon
- Coriander Powder – 1 teaspoon
- Cumin seeds powder – 1 teaspoon
- Sugar – 1 teaspoon
- Oil – 1 teaspoon + to shallow fry cutlet
- Corn flour – 2 tablespoon
- Bread crumbs – As needed
- Salt to taste
Method:
Boil water with salt and sugar. Add cleaned and drained Palak. Switch it off.
Close it with lid. Leave it for 5 mins. Drain it
After cool down grind to smooth paste
Mash potato and chick peas.
Add Carrot, mint leaves, coriander leaves, red chilli powder, cumin powder, coriander powder, grinded paste and salt. Mix it together to make smooth dough
Heat 1 teaspoon of oil. Add onion and fry till slight brown color. Add Potato, Palak mixture
Fry for 2 mins and till dough comes together. Let it cool down.
Add required water to corn flour, salt mix well to get slightly thicker paste.
Make lemon size ball. Flatten it.
Dip it in corn flour mixture. Roll it in bread crumbs. Make sure it is fully coated with crumbs
Heat pan add oil for shallow fry. Arrange cutlets. Cook it in low flame. Once cooked turn it over and cook on other side. Once done remove it
Serve it with your favourite dip
