Palak Kofta Curry recipe – Curry with spinach kofta recipe – side dish recipe – Side dish for roti, rice, fried rice

Are you bored with Palak Paneer or any pureed palak base recipe for that matter? My kids were but had some spinach in the fridge so I had used spinach instead of  palak.  This goes well with fried rice or roti or steamed rice. You can make this kofta for an evening snack too. I had used Kuzhi paniyaram maker for making kofta but if you could deep fry  if you prefer.
Ingredients:


For Kofta:


Potato – 2 medium
Spinach  or palak – 1 bunch (medium)
Salt to taste
Besan / Gram flour – 2 tablespoon
Red chilli powder – 1/2 teaspoon
Cumin powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Amchur powder / Dry mango powder – 3 pinches
Oil for shallow frying


For Gravy
Tomatoes – 3 (medium)
Onion – 2 (medium)
Garlic – 4 inch
Ginger – 1 inch
Oil – 4 teaspoon
Cumin seeds – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Garam masala powder – 1/2 teaspoon
Red chilli powder – 1 teaspoon (adjust to your spice level)
Coriander powder – 2 teaspoon
Coriander leaves – 2 tablespoon
Cashew nuts – 2 tablespoon 



Method:
Kofta


Cook and mash the potatoes. Heat the pan and add cleaned and chopped spinach leaves. Add bit of salt.Cook it. 

Add mashed potatoes. Add Besan / Gram flour, Red chilli powder, Cumin powder, Turmeric powder and Amchur powder / Dry mango powder. Mix well. 

And make a kofta dough make small lemon size balls. Heat the kuzhi paniyaram pan and add oil in each hole

Place the kofta in each hole and cook in low medium flame. Once cooked turn it over and cook all the the sides. Repeat this for all the balls and keep it aside.

For Gravy
Soak cashew nuts in warm water for 30 mins. Grind to smooth paste.

Heat 3 teaspoon of oil. Add ginger garlic and fry till garlic is brown in color. Add onion and fry till transparent. Add tomatoes and fry till mushy. Switch it off. Let it cool down. Grind onion tomato mixture when it is completely cool down with salt, garam masala powder, coriander powder, turmeric and red chilli powders. 

Heat rest of the oil in the pan and add cumin seeds. Let it crackle Add grinded paste and required water. I have added about 3 cups. Let it boil till nice aroma released. Add cashew paste. And mix well. Let it boil for another 3 mins or desired consistency is reached

Add fried kofta slowly. Add coriander leaves. Switch it off

Serve hot
