This vegetable is totally new. I have ordered this online thinking it is Ivy gourd (by mistake not looking at it properly) when it arrive I realized it is different as it is slightly bigger than ivy gourd then I searched in the net to find out what is it and what we can do with it. In the end I decided to do simple stir fry with it. I served it with rice but this can be served as side for roti / paratha. I loved it with my curd rice
Ingredients:
Parwal / Pointed gourd – 300g
Turmeric powder – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Coriander powder – 1 teaspoon
Onion – 1 (slice thinly)
Ginger/ Garlic paste – 1.5 teaspoon
Salt to taste
Oil – 1.5 tablespoon (I have used coconut oil)
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Coriander leaves – 1 tablespoon
Method:
Trim the ends and peel the skin. Slice it thinly.
Heat oil add mustard seeds and cumin seeds. let it crackle. Add onion and salt to required to fry onion. Fry till transparent
Add ginger, garlic paste fry for a min. Add sliced parwal. add Turmeric, salt and mix it well. Close it with lid and cook it. when 3/4th done add red chilli powder, coriander powder, garam masala mix well. continue to cook
Once done sprinkle coriander leaves and switch it off
Serve hot!
