Peanut Butter Cookies

For some reason, I still have fear to do cookies and bread. Bread is due to yeast.. Every week my kids want to have meal at subway at least once a week. It is not because of the sandwiches there it is because of cookies. As I bake more often they have been asking for cookies.Sometime ago I did Chocolate Chip Cookies and kids loved it. For some reason I haven’t tried cookies after that. This weekend I have decided to try it out again. This time with peanut butter cookies. It came out extremely good
Ingredients:

Unsalted butter – 1 Cup
Sugar – 3/4 Cup
Brown Sugar – 1 Cup
Eggs – 2  or 2 tablespoon of Flax seed powder mixed with 6 tablespoon of water

Vanilla Extract – 2 teaspoon

Chunky Peanut butter – 1 cup
All purpose flour – 3 cup
Baking soda – 1/2 teaspoon
Baking powder – 1 teaspoon
Salt – 1/2 teaspoon (skip if u are using salted butter)

Method:


Preheat the oven at 180 degrees
In a large bowl add room temperature soften butter with sugar (both white and brown). Beat till sugar is melted and the mixture is creamy. Add in Vanilla extract, Flax seeds mixture and peanut butter. Mix well.




In another bowl shift in flour, baking powder, baking soda and salt. Add this to the wet ingredients slowly and mix well. 

Refrigerate the dough in the fridge for 1 hour

Take out the dough by hand and roll 1″ inch ball and flatten each ball. Use fork to get cookie with cris corss pattern (If the dough stick to fork just pat it water make sure u use minimal water)

Bake for 10-12 minutes until gloden brown around the edges. Cool completely on a wire rack and store it air tight container. Enjoy the cookie
