My whole family love Khasta Kachori . In fact whenever I asked my kids for their option of snacks I always get Kachori for an answer. I have made khasta kachori few times. I was postponing making of peas kachori because my 2nd is not a big fan of peas. Since the filling is in mashed form I have decided to give it a try without let him know. When he tried he really loved it. He found out that the stuffing is made of peas within one bite.
Ingredients
For Dough (Crust)
Maida / plain flour – 1.5 cups
Ghee – 3 tablespoon
For Stuffing
Peas – 1 cup ( I have used frozen one)
Coriander leaves – 1/2 cup
Red chilli powder – 1/4 teaspoon ( adjust to your spice level)
Dry mango powder – 1/4 teaspoon
Cumin seeds powder – 1/2 teaspoon
Garam masala – 1/4 teaspoon
Salt to taste
oil – 1/2 teaspoon
Method:
Mix in all the ingredients under dough in broader vessels. Mix well. Make a soft dough by adding cold water. Keep it under damp cloth for 30 mins.
Wash and cook the Peas in microwave for 3 mins with little water and salt. Once cooked drain it and grind to coarsely with coriander leaves
Heat the pan and add 1/2 teaspoon of oil. Add grinded paste. Add red chilli powder, dry mango powder, gram masala powder and cumin seeds powder. Mix well. Fry till moisture is fully absorbed. Switch it off and divide it into 8 equal balls
Divide the dough into 10 equal balls. Roll them into small circle.
Put one portion of filling and roll them together to seal. Remove the excess dough. Roll it into 2 inch round disk. Make sure the filling doesn’t come out or no tearing. Repeat the process for all the 10 kachori. Heat the deep curved pan and add oil for deep fry.
Heat the deep curved pan and add oil for deep fry. When it is in correct temp put the kachories. (When you put the plain dough it should raise immediately. then oil is in right temp). Fry till all side is brown in color in medium flame. Drain it and leave it on kitchen tissue to drain the extra oil. Repeat the process till all kachories are done
Serve hot
