Pepper Rice with Cucumber in Yogurt Sauce (Raita)

I wanted to make some simple and yet balanced meal. Adding nuts to the rice makes it special and well balanced esp for the kids. This rice is very simple and easy to make. The combination of pepper, garlic, Red Chillies and cashew nuts really makes it interesting.

Ingredients:

Cooked Rice – 1 Cup (I have used brown rice)
Pepper – 3/4 teaspoon
Red Chillies – 2
Curry Leaves – 20 leaves
Garlic – 10 to 12 (peel and chop finely)
Cashew Nut – 15
Salt per taste
Oil – 2 teaspoon




Method:

Powder Cashew nuts first and add dry roasted Red Chillies and black pepper, grind it to fine powder. Roast Curry leaves and crush it with your hand

Heat the oil in the kada. when hot add Garlic and fry till it is golden brown. Add the powder and curry leaves and mix well. Add Cooked rice and mix well. Decorate with cashew nuts and serve hot with favourite raita. I did Cucumber

Cucumber Raita



Ingredients:


Yogurt – 1.5 Cup
Sliced Cucumber – 1 Cup
Salt per taste
Green chillies – 3 chopped finely (if giving to kids make bigger pieces)
Cumin powder – 1/2 teaspoon


Method:


Mix in everything. And serve. You can Chill and serve too
