I love Pesto. Pesto Pasta is my savior when I travel. It is a less cheesier option and not that heavy. I am surprised that I didn’t post it in my space yet .. Will post soon. This weekend I made pesto rice. Kids loved every bit of it. It is very easy to make too. I have added some vegetable to it but it is up to you. I have used cooked brown rice you can use bastmati too.
Ingredients:
Cooked rice – 3 cup (I have used brown)
Mixed vegetable – 1.5 cup ( I have used beans and carrot)
Salt to taste
Garlic – 25 pods (chipped finely)
Onion – 1/2 finely chopped
Olive Oil – 1 tablespoon
For Pesto
Basil leaves – 1.5 cup
Coriander leaves – 1.5 cup
Green chillies – 2
Pepper powder – 1/2 teaspoon (adjust to your spice level)
Parmesan cheese – 1/2 cup
Olive oil – 1/4 cup
Salt to taste
Garlic – 5 pods
Walnut – 7-10
Method
Grind garlic and walnut first with required water.
Add rest of the ingredients under Pesto. Grind to smooth paste
Heat the pan and add oil. When it is hot add garlic and fry till brown in color. Add Onion and fry till transparent. Add vegetables and cook it with salt.
Add grinded paste. Mix well. Cook till oil separate it
Keep cooked rice in a plate till it is cool down a bit. Add this to pesto paste. Mix well.
Switch it off and Serve hot

Yamini, I have used NTUC Brand. I use 1 cup rice to 1.25 cup of water if I want it for fried rice or this kind of rice. for sambar I do 1.5
