Anything which is quick I am all in for it. This rice is perfectly spiced and perfect for leftover rice. you can actually put all the masala and marinate for longer & temper it when you are above to serve. It is so simple that you can put all these together in under 20 mins (excluding marination time). Perfect for lunch box. If you want to make it wholesome you can add more vegetables. But traditionally no vegetable added. I have added beans & carrots to the recipe which is totally optional. With the addition of vegetables, you don’t have to do separate vegetables as a side dish.
Ingredients
Leftover rice – 2 cup ( I have used brown rice)
Salt to taste
Coriander leaves – 1 tablespoon (Finely chopped)
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 teaspoon
Garam masala – 1/2 teaspoon
oil – 3 teaspoon
Mustard seeds – 1/2 teaspoon
Vegetables – 3/4 cup (Optional)
curry leaves – 10
onion – 1 (finely chopped)
Garlic – 5 pods (finely chopped)
Method:
Take leftover rice in a bowl. Add coriander leaves, turmeric, chili powder, garam masala mix well. Keep it aside for at least 30 mins
Heat oil. Add mustard seeds, cumin seeds. let it crackle. Add curry leaves garlic, onion. Fry till transparent. add vegetables. Add required salt. Cook it till 3/4th done
Add rice and fry at high flame for 1-2 mins. Close it and cook for 2 mins at low flame. Rice ready.
Serve hot
