Pineapple and quinoa salsa

This is very simple and flavorful salad. This can be served as starter or can be for a lunch box too. I love the fact it combines vegetable, fruit and protein packed quinoa. It is quite refreshing. If you are planning to go on a diet this is good diet recipe too
Ingredients:
Green Bell pepper – 1
Diced Fresh pineapple – 1 cup
Cooked quinoa – 1 cup
Coriander leaves / cilantro – 1/2 cup finely chopped
Onion – 1 (finely chopped)
Salt to taste
Lemon juice – 2 tablespoon
pepper powder – 1/2 teaspoon (adjust to your spice level. If you prefer you can replace it with 1 green chillies)



Method:


In a bowl add all the ingredients above. And mix well. Serve as starter. For me it makes good lunch box.

Perfect to enjoy it any time
