Pineapple Sheera (Pineapple Kesari)

We normally do only plan Kesari. It is one of my husband’s favourite sweet. Most of the time I do 
normal plain one. But Once in a while I try to sneak in some twist. Addition of fruit makes it
interesting. Adjust the sugar level based on sweetness of of Pineapple. I can say this as healthy
as sweetness comes from sweetness of the pineapple & only 1 teaspoon sugar added


Ingredients

  • Semolina : 1 Cup
  • Sugar :1.5 cups to 2 Cups (adjust it to your sweetness I hv used only 1 teaspoon.)
  • Pineapple : 1 Cup( I got some sweet Pineapple so I have added only 1 teaspoon of sugar)
  • Ghee : 2 Tablespoon
  • Oil: 2 tablespoon
  • Cashewnut : 12-15 (break into half
  • Raisins : 1 tablespoon (Optional)
  • Pineapple essence : 2 teaspoon (Optional)
  • Yellow colour powder: 1/4 teaspoon (Optional)
  • Water : 3 Cup

 Method

  • Peal the skin of pineapple and cut into small pieces.If Pineapple is sour soak the pieces in            sugar for an hour. If the pineapple is sweet skip this step
  • In a bowl take 3 cups of water, add yellow colour (if using. I didn’t use it) and boil the water.            Make sure you boil the water till u need it
  • In a frying pan, heat ghee and fry cashew nuts and raisins(if using) for a minute.                                   Add semolina and fry for 5 minutes. Add pineapple and mix it well
  • Add boiling water and stir well. Close the lid and cook the mixture. It might take 4-6 mins.                   Stir in between
  • When the semolina is cooked, add sugar and essence (if using. I didn’t use it).
  • Stir well and when the contents blend well, remove from stove. Decorate with nuts / raisins
