Pineapple sweet pongal (rice)

I always like dessert / rice with fruits. Natural sweetness from fruits gives good flavour to the rice/dessert. If I am using fruits I will try to use fresh fruits instead of preserve or tinned. I will also reduce the sugar or completely omit depends on the sweetness of the fruits
 Ingredients:



Bastmathi Rice – 1 Cup
Pineapple – chopped finely 1 cup (I have used fresh you can use tinned one. If using tinned pineapple drain the syrup)
Sugar – 1/4 cup (I have used it only one tablespoon)
Milk – 1/2 Cup
Cashew Nuts / Almond – 1/2 Cup
Oil – 2 teaspoon (if you want use Ghee)
Salt- a pinch
Caradamom powder – 1/4 teaspoon



Method:


Soak cashew nuts / almond warm milk for 1 hour. Grind that to smooth paste

Wash and soak rice for 10 mins. Drain the water and keep it aside. Head kada and add oil. Add rice and fry  till all moisture absorbed

In a pressure cooker add rice, pineapple, pinch of salt and 3 cups of water. (Adjust the water according to the nature of rice. Rice has to be cooked well.. like Pongal consistency)

Open the lid when pressure is released add sugar and caradamom powder mix well. Add Grinded paste also and mix well. If the rice is too thick add boiled milk and mix well.

Enjoy the hot rice
