I love to try different dosas. Normally we have tiffin varieties for dinner esp during school days. Kids has very long hours and have only dinner at home most of the time. So I try to incorporate Vegetables as part of some dish during dinner. White Pumpkin or Poosanikai is very healthy. Last time when I visited my cousin she served this dosa for breakfast. It tasted good so I took the recipe from her… This is a simple dosa and needs fermentation. If you don’t have Cholam / Jowar you can use rice itself
Ingredients
Idli Rice – 1.25 Cups
Jowar / Cholam – 3/4 cups
Urad Dhal – 1 handful
Cashewnuts – 10
Red chillies – 3-4
Salt to taste
Grated Ash Gourd – 2 cups
Fenugreek Seeds – 1/4 teaspoon
Oil for cooking Dosa
Method:
Wash and soak Rice, Cholam, Cashewnuts, Urad dhal, Red chillies for 5-7 hrs. Clean and grate ash gourd
Grind grated ash gourd. Add rice, cholam, cashewnuts, urad dhal, Red Chillies, Fenugreek. Grind to smooth batter. Add Salt and mix well. Let it ferment it. If needed add water mix well
Heat flat pan and Pour laddle full of batter spread it. Sprinkle oil around it. Let it cook. Turn it over and cook. Once done take it out
Serve hot
