My son love Puliyodharai / Puliyogare. I get the Pulikachal from my mum to make this rice or I make Raw tamarind rice . I have posted Tamarind Rice before. But never get a chance to take pics for making tamarind paste. This recipe was in my to do list for long time. Once now get a opportunity to do it. This paste is very handy. I make Idiyappam, rice with this
Ingredients
Tamarind – 1/4 kg (250g)
Oil – 150 ml (Sunflower oil)
Oil – 100 ml (Gingerly oil)
Mustard seeds – 2 teaspoon
Curry leaves – 40-50
Urad dhal – 2 tablespoon
Chana dhal / Bengal gram dhal – 2 tablespoon
Red chllies – 1/2 cup (I have used small Fat ones.)
Turmeric powder – 1 teaspoon
For making spice powder
Urad dhal – 1/4 cup
Sesame seeds – 2 teaspoon
Chana dhal – 3 Tablespoon
Fenugreek Seeds – 1 teaspoon
Asafoetida – 1 teaspoon
Pepper corns – 1 teaspoon
Dry red chillies – 3/4 cup to 1.5 cup (adjust to the spicyness of the chilli and your preference. I have added 1 cup. Mine was not that hot)
Method:
Add about 1.5 litter water to the tamarind and leave it for 1 hour. Make a tamarind extract. Add a 1/4 teaspoon and roast asafoetida
Dry roast Urad dhal, chana dhal till brown color. Add rest of ingredients and fry for 2 mins. Switch it off and let it cool down.
Heat the pan and add Tamarind extract, salt and Turmeric powder. And let it boil till it thickens. Add powdered masala. Reduce the flame and Mix well. If it is not smooth don’t worry when you add tampered hot oil it will be ok
Heat oil in the pan. Add Mustard seeds, Urad dhal, Bengal gram dhal. Let Mustard seeds pop and dhals are brown in color. Add Curry leaves, Red chilli fry for 30 sec. Add this to Pulikachal. Mix well. Add Jaggery and mix well. Boil it till the pulikachal leaves the pan and oil oozes out.
Store it in Air tight container
