I love kuli / kuzhi paniyaram. It is perfect for a after school snack or for using sour idli / dosa batter. I love the masala / savory version. When I try to replace Millets / quinoa for rice in south Indian dishes 50% millet / quinoa and 50% rice works the best. This is perfect for after school / teatime snacks. Actually first day I made uthappam and next day made Kuzhi paniyaram. Kids enjoyed both.
Ingredients:
Quinoa – 1.5 cup
Idli Rice – 1.5 cup
Urad dhal – 3/4 cup
Salt to taste
water for grinding
For Paniyaram
Batter – 5 cups
Onion / Shallots – 1/4 cup (I prefer Shallots finely chopped)
Oil – 2 teaspoon
Green chillies – 1
Fried Uppu millagai – mor millagai – 2 (crushed)
Urad dhal – 1 teaspoon
Curry leaves – 10
mustard seeds – 1/4 teaspoon
Bengal gram dhal – 1 teaspoon
Coriander leaves – 2 tablespoon (finely chopped)
Ginger – 1/2 teaspoon
Oil for making paniyaram
Method:
Wash and soak Urad dhal, Quinoa and idli rice together for 5-7 hrs or overnight.Grind it to smooth batter with required water
Let it ferment it overnight. Heat 2 teaspoon of oil. Add mustard seeds let it pop. Add urad dhal, bengal gram dhal, curry leaves, green chillies. Fry till brown color.
Add ginger and onion and fry till transparent. Add crushed mor millagai and coriander leaves
Add this to batter. mix well. Heat paniyaram pan and add oil
When oil is hot pour batter and cook till brown in color. Turn it over and cook till all the sides are cooked.
Remove it and serve it with chutney. I served with carrot chutney
