I was craving for paniyaram but didn’t have idli batter in the fridge. I was checking with my helper and she suggested to do Rava appam. I had an impression Rava appam is always sweeter version. She told about this spicy/ Masala Kara paniyaram. This requires no grinding or fermenting. So you can do it when you have unplanned visitors or you are craving some snacks with your tea. You can add any kind of vegetables. Everyone liked this. For sure it is a keep recipe
Ingredients:
Rava / Semolina / Sooji – 1 cup (No need to roast)
Yogurt – 1/2 cup
Salt to taste
Carrot – 1/2 cup (grated)
Curry leaves – 10 (chopped finely)
Coriander – 1 tablespoon (chopped finely)
Mint Leaves- 10 (chopped finely)
Onion – 1.5 cups (chopped finely)
Oil – 3 teaspoon + oil for cooking paniyaram
Urad dal – 1 teaspoon
Bengal Gram dal – 1 teaspoon
Cashew – 1 teaspoon (broken)
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Green chillies – 2 (chopped finely)
Baking soda – 2 pinches
Method:
Mix Rava, Yogurt, salt and 1/4 cup of water. Let it sit for 1/2 hour to 1 hr
Heat 1 teaspoon of oil. Add Mustard seeds, Cumin seeds. Let it pop. Add Urad dal, Bengal gram dal. Add cashew, Chillies, curry leaves and mint leaves. Fry till dals are brown in color. Add this to batter. Add Carrot to batter.
Heat rest of oil and add onion and salt to fry. Fry till slight brown in color.
Add this to batter. Add Coriander leaves and baking soda. Mix well. Add required water to make it into idli batter consistency
Heat Paniyara pan. Add oil and heat it. When oil is hot pour batter in each hole.
Close it with lid. Let it cook.
Turn it over and cook on other sideOnce cooked remove it from pan and serve hot
