Rava paneer square – Sooji Paneer Square – Healthy Snack recipe – Kids Snack recipe – Party Recipes

I saw this at mytastycurry  and loved the idea. I have followed recipe with minor modification. It is perfect tea time / afterschool snack or even good for snack box for the kids. I have added Paneer It gave very nice Flavour and taste. Also it is increases the nutritional value of the snack. This can be served as breakfast. It is very close to Upma but presented differently I am pretty sure even who doesn’t like upma will love this! Try out and  give your feedback
Ingredients


Rava / Semolina / Sooji – 1 cup
Onion – 1 (chopped finely)
Vegetables – 1.25 cup (I have used beans and carrot)
Green chillies – 1 (chopped finely. Adjust to your spice level)
Oil – 2 teaspoon + for shallow fry
Potato – 1 (medium size. Cooked and mashed)g
Grated Paneer – 1/3 cup
Water – 2.5 cups
Salt to taste
Corainder leaves – 1 tablespoon (finely chopped)
Mint leaves – 5-7 (chopped finely)
Curry leaves – 10 (finely chopped)


Method:

Heat Oil and add onion, salt fry till transparent. Add Vegetables. Mix well. Adjust salt. Continue to cook at medium flame for 2 mins. Add rava/ Semolina/ Sooji and mix well. Fry for 30 sec. 

Add 2.5 cup of water. Close it with lid and cook it

Once cooked add mashed potato and mix well. Switch it off. Once cool down add paneer, Coriander leaves, mint leaves, curry leaves. 

Knead it to mix well. Grease a plate and spread the mixture. Refrigerate it for 30 mins.

Slice it 

Heat a pan with oil for shallow fry. Add these square and cook till sides are brown. Flame has to be low and it will take sometime to get it cook. Otherwise outside will be browned but inside would be soft.
