I love this dish. It is a perfect blend of flavours. It is one of the must do dishes for Tamil new year or any new year. But after moving to Singapore we get mango almost every day. So I make it very often. I love it on my bread toast too. My husband likes it with curd rice also. If I make it for New year I will add Neem flower while tempering. It will give all 5 tastes sweet, sour, bitter, saline (thuvarpu) and salt in one recipe. Happy new year to all my readers!
Ingredients:
Raw Mango – 1.5 cup
Jagger – 1/4 cup
Salt a pinch
Tumeric powder – 1/4 teaspoon
Rice flour – 1 teaspoon
Oil – 1 teaspoon
Mustard seeds – 1/4 teaspoon
Curry leaves – 20
Green chilli – 2 (slit into two)
Asafoetida / hing – a pinch
Urad dhal – 1 teaspoon
Method:
Mix rice flour in 1/4 cup of water. Keep it aside. Heat the oil in a pan. Add mustard seeds let it pop. Add curry leaves, urad dhal, asafoetida and green chilli. Fry till dhal is in brown color. Keep this aside
Cook the mango with salt and turmeric powder in pressure cooker or in a vessel with lid closed. It has to be cooked well so that you can mash it. I have used pressure cooker and cooked till 3 whistle. Open the lid add tempered items. Add jaggery to it and boil till jaggery is fully dissolved. Add dissolved rice flour. Cook till desired consistency is achieved.
Serve it with rice or bread

sure u can skip the flour .. just that Pachadi would be little watery but taste wise no compromise
