Rice Adai Upma – Rice Dosa Upma – Dinner Recipes – Breakfast, Brunch Recipes — Snack recipes

When I saw a Mother’s day video from Raji from RaksKitchen I remembered a similar dish I used to have from one of my best friend from college. She normally brings it with Adai. Since Raks video called for plain Rice adai / dosa, I decided to do with Rice dosa. These days Coconut is back in health trend. I have been using coconut oil for seasoning. So for this I have used coconut oil too. My mum would be surprised as she used to reserve dishes without coconut for me. Now a days I am ok with coconut gratings in my vegetables and using coconut oil for seasoning too

Ingredients:


Idli Rice – 1.5 cups
Green chillies – 3
Curry leaves – 10
Small Onion / Shallots – 20 (Peel and chop finely)
Coriander leaves – 1 tablespoon
Urad dal – 1 teaspoon
Hing – Lavish pinch
Cooked Toor Dal – 1 cup to 1.5 cups
Coconut – 1/2 cup
Oil – 1 tablespoon (Coconut) + oil for cooking dosa / adai
Salt to taste



Method:


Wash and Soak rice for 3 hrs and grind to smooth batter with salt. Heat flat pan. Pour laddle full of batter and drizzle oil.

Close it with lid and cook it. Turn it over and sprinkle some water cook again. Remove it from pan. Continue and finish all the batter

Now pinch cooked dosa and make small pieces. Keep it aside.

Cook dal till it is soft but still holds the shape. 

Heat 1 tablespoon of oil. Add Green chillies, curry leaves, Mustard seeds. Let it pop. Add urad dal, Hing. And fry till brown color. Add Chopped onion and salt.

Fry till brown color  Cook the dal Let it boil. Add Dosa/ Adai pieces. Mix well. 

Add coconut, cumin seeds powder mix well. Add coriander leaves. mix well

Switch it off and enjoy
