Semiya Kesari / Vermicelli Kesari – – FOR VINAYAKAR CHATURTI / VARALAKSHMI POOJA / VARALAKSHMI Nombu

My husband is big fan of Rava kesari. So everytime I wanted to some simple sweet I end up making kesari. I have posted Kesari, Pineapple Kesari, Papaya kesari before. Today I wanted to do some quick dessert. However I run out of rava. Still wanted to do Kesari. I remember tasting Semiya Kesari sometime ago. So decided to go with it. My husband initially was not happy that it is not his favourite kesari but in the end he said it is also not that bad (In fact he finished the first serving and asked for more)
Ingredients:

Semiya / Vermicelli – 1/2 cup
Water – 3/4 cup
Milk – 1/4 cup
Sugar – 1/2 cup (I have used brown sugar)
cardamom powder – 1/2 teaspoon
Cashewnuts – 1 tablespoon (broken into pieces)
Ghee – 1 tablespoon
Salt a pinch

Method:
Heat the kada and 1 teaspoon of ghee. Add cashewnuts and fry till brown in color. Take out and keep it aside. Add rest of the ghee in the same kada. Roast the semiya till it is brown in color (take care not to burn it) I had roasted vermicelli so I skipped this.

Add water and let it cook. Cook well. Add milk and sugar and stir it till it becomes thick. Add cardamom and mix well. Fry for another couple of mins. Add Fried cashew nuts and mix well. When ghee start to come out it is ready to be tasted. Switch it off and serve hot
