Shahi Vegetable Kurma – Creamy Vegetable Korma – Simple side dish for roti / Chapathi / Naan / Parotta / Paratha / Rice

I had the mixed veg which was cut for rawa kichadi in the morning. So decided to do kurma for Chapatti.. Instead of Coconut decided to use yogurt it turn out to be pretty good
Ingredients: 


Mixed Vegetables ( carrots, Potatoes, Peas, chow-chow, beans etc..) – 3 cups
Chilli Powder – 1 teaspoon (if u like it spicy add more)
Grated Onions – 1/2 Cup
Ginger/Garlic – 1 teaspoon

Whipped Curds – 11/2 Cups (I hv used low fat plain yogurt)
Bay Leaf – 1
Cinnamon,clove, cardamom – few in each
Oil – 3 teaspoon


Grind together using Milk:


Almonds – 14
Cahewnuts – 6
Poppy Seeds – 1tsp


Method:


Steam cook diced vegetables in pressure cooker
Heat the oil in frying pan masala spices, grated onions, ginger garlic paste
Fry till golden brown add chilli powder, curd and salt
Stir in medium flame till ghee floats on top
Add ground paste, cooked vegetables with enough water
Cook till kurma becomes thick
